Valentine's Baking.

Daddy's Favorite Chocolate Cake

1 square (1 ounce) unsweetened chocolate, finely chopped

1/2 cup water

1 package (18.25 ounces) plain devil's food cake mix

1 package (3.9 ounces) chocolate instant pudding mix

4 large eggs

3/4 cup buttermilk

1/2 cup vegetable oil

2 teaspoons pure vanilla extract

Melt square of chocolate in water on low. Stir until melted. Place cake mix, pudding mix, eggs, buttermilk, oil and vanilla in a large mixing bowl. Fold in melted chocolate. Blend with mixer for 1 minute, then scrap down the sides of the bowl. Increase the mixing speed to medium and blend for 2-3 mintues more. Pour batter into bundt pan that has been sprayed with vegetable oil spray and dusted with flour. Bake at 350 degrees for 45-50 minutes.

Frosting: 1 stick of butter, 1/4 cup unsweetened cocoa powder, 1/3 cup whole milk or half and half, 4 cups powdered sugar. Place butter in medium saucepan and melt over low heat. Stir is cocoa and milk. Bring just to a boil then remove from heat. Add powdered sugar. Stir and stir and stir! Pour warm frosting over your delicious cake, then serve to the best man/men in your life.
